    What beer or brewery represents your state?

    Illinois: Dovetail Brewery, Hefeweizen

    Before everyone cries foul for not selecting Goose Island or the iconic Old Style, a Wrigley Field favorite, Dovetail Brewery is a brewery that you must try. Recently selected as one of the Top Five Best New Breweries in the United States in USA Today 10Best’s “Best New Brewery” contest, Dovetail Brewery is a star in the crowded Illinois beer scene.

    Owned and operated by Master Brewers Hagen Dost and Bill Wesselink, Dovetail Brewery has earned its place in the craft beer scene. The brewery’s attention to detail and love of beer is apparent in each and every sip. One of the brewery’s taglines is “we brew like monks (minus the vows).” They aren’t pretentious; they just make outstanding beer.

    According to Dovetail Brewery, the brewery is known for “traditional German-style lagers, traditional Hefeweizen, Rauchbier, and Lambic-style sour beers.” The owners and brewers wanted to make outstanding beer. The brewery has exceeded those expectations at every turn.

    Until recently, Dovetail Brewery beers were only available at the brewery’s taproom. Starting in April 2017, Artisan Imports announced a partnership to distribute beers both locally, and eventually nationally.

    To choose just one of these beers to try is difficult. Still, the Dovetail Brewery Hefeweizen is a perfect any time of the year. The wheat beer is complex yet quite refreshing. With citrus notes and a slight hint of clove, this German style beer is easy to drink. Whether paired with appetizers or a hearty meal, it will be hard to stop at just one Dovetail Brewery Hefeweizen.

    Dovetail Brewery is located at 1800 W. Belle Plaine in Chicago. Bottle distribution will be available soon.
